Fried chicken tenders

Servings: 4-6
Time:30min-1hr

Pretty much just what it says. Fried chicken tenders.

Ingredients:

6 chicken breasts
4 eggs
1/2 cup milk
1 tbsp mayonnaise
(don't judge me, it's good)
big dash hot sauce
(I like garlic Cholula, but use your fave)
4 cups flour
3 tbsp seasoning salt
3 tbsp Cajun seasoning
1&1/2 cup coconut oil
1&1/2 cup canola oil

Directions:

1. Slice chicken into inch thick strips.

2. Beat eggs, milk, mayonnaise, and hot sauce together until completely blended.

3. Sift flour and seasonings together.

4. Dip strips into egg wash and coat in flour.

5. Let strips sit for one minute.

6. Repeat step 4. Set strips aside.

7. Heat oils together on med-high heat for 10 min or until hot.

8. Gently place strips in oil and fry until golden brown all over.

9. Put on plate lined with paper towels to drain oil.

10. Serve and enjoy!
